The State Agriculture Department has shut down a Woodford County food processing plant for unsanitary conditions. State officials have ordered Art's Tamale of Metamora to close and an administrative law judge revoked the plant license. Testimony indicated rodent droppings in the plant and after numerous inspections, operators had failed to take corrective action. The state alleged Art's Tamale failed to have a pest control management program, and packaged and held product under unsanity conditions. The Bureau of Meat and Poultry Inspection deals with 243 establishments around the state. The business has a month to appeal.
