It's been decades since distilleries, like Hiram Walkers, closed in Peoria, where several facilities once pumped out whiskey. Now a new distillery is planned in the southern Tazewell County community of Delavan. The Thomas Mather distillery, in a bank building that dates back to the 1880's, will produce rye whiskey, a must for your Old Fashioned, along with single batch vodka or gin. Mathers hopes to open the operation, next to the Harvest Cafe owned by his mother, in the spring.
